  4. In a large bowl, mix sugar and lemon zest until combined. Stir in cooled butter, then add the egg, egg yolk, and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined. Gently fold in blueberries.
  6. Scoop dough onto the prepared baking sheet about 3 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow cookies to cool on the sheet for a few minutes before transferring to a cooling rack.
