  • ½ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 tablespoons unsalted butter (melted and cooled)
  • 1 can (14 ounces) sweetened condensed milk
  • 4 large egg yolks (room temperature)
  • 2 tablespoons heavy cream
  • â…› teaspoon salt
  • â…” cup fresh lemon juice (about 45 lemons)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugars, salt, baking powder, and melted butter until crumbly. Press into a greased 9×13 inch baking dish.
  3. Bake crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together condensed milk, egg yolks, heavy cream, salt, and lemon juice until smooth.
  5. Pour filling over the crust and return to the oven for another 15 minutes.
  6. Allow to cool completely before refrigerating for at least two hours before cutting into bars.
