  • 1 cup pecorino romano cheese, grated
  • 1 cup panko breadcrumbs
  • Zest of 2 lemons
  • 2 large eggs
  • 1 cup heavy cream
  • Juice of 2 lemons
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, mix together the grated pecorino cheese, panko breadcrumbs, lemon zest, salt, and pepper.
  3. Beat the eggs in another shallow bowl.
  4. Season chicken breasts with salt and pepper. Dip each breast in beaten eggs and then coat thoroughly with the breadcrumb mixture.
  5. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes on each side until golden brown.
  6. Transfer skillet to the oven and bake for 15–20 minutes until chicken is cooked through (165°F/75°C).
  7. For the creamy lemon sauce, combine heavy cream, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a saucepan over medium heat. Stir until simmering and slightly thickened.
  8. Plate the chicken, drizzle with creamy lemon sauce, and garnish with fresh parsley.
