  • 50g white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 150g all-purpose flour
  • 1 cup mangoes (diced)
  • 1 cup sweet rice
  • 0.5 cup coconut milk

Instructions

  1. Rinse and soak sweet rice for at least 4 hours or overnight.
  2. Steam soaked rice for about 30 minutes until tender.
  3. In a mixing bowl, cream together butter and sugars. Mix in egg and vanilla.
  4. In another bowl, whisk flour, baking soda, and salt; combine with wet ingredients.
  5. Fold in diced mangoes.
  6. Mix cooked sweet rice with coconut milk to create filling.
  7. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
  8. Scoop dough onto the sheet, add sweet rice filling, and cover with more dough.
  9. Bake for about 15 minutes until golden around the edges.
