  • 600 g vegan cream cheese
  • 100 g granulated sugar
  • 120 g vegan Greek-style yogurt
  • 500 g vegan cookies
  • 2 fresh mangoes (for garnish)

Instructions

  1. Prepare the cream mixture by combining mango pulp, granulated sugar, and cornstarch in a mixing bowl. Add cold vegan cream cheese, vegan Greek-style yogurt, vanilla extract, and powdered sugar; whisk until smooth.
  2. Soak the cookies in a mixture of wild mango balsamic star, remaining mango pulp, and hot water.
  3. Layer soaked cookies in a baking dish, followed by half of the cream mixture. Repeat with another layer of cookies and remaining cream.
  4. Top with finely diced fresh mangoes.
  5. Cover and refrigerate for at least two hours before serving.
