Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 lemon (juiced and zested)
- 1 can (14 oz) artichoke hearts (drained and quartered)
- 1/2 cup pitted green olives (halved)
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- Fresh parsley (for garnish)
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1/2 red onion, sliced
- 2 cloves garlic, minced
Instructions
- Preheat oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, oregano, basil, and garlic powder.
- In a cast iron skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté sliced red onion and minced garlic for about 2 minutes.
- Add artichokes and olives; cook for another 2 minutes.
- Pour in chicken broth, white wine (if using), lemon juice, and zest; bring to a simmer.
- Return chicken to skillet, spooning sauce over it.
- Bake in preheated oven for 20-25 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
