  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup kalamata olives, halved and pitted
  • 3/4 cup crumbled feta cheese
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • Fresh parsley and basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare your vegetables: halve cherry tomatoes, dice cucumbers, slice red onion thinly, and halve olives.
  3. In a small bowl, whisk together olive oil, vinegar or lemon juice, minced garlic, salt, and pepper to make the dressing.
  4. In a large mixing bowl, combine cooked pasta with vegetables and dressing; toss well.
  5. Gently fold in crumbled feta cheese and fresh herbs.
  6. Refrigerate for at least 30 minutes before serving for enhanced flavor.
