- 5 chicken thighs, skin on, bone in
- 1 – 2 lemons (zest + juice)
- 1 tbsp dried oregano
- 4 garlic cloves, minced
- 1 small onion, finely diced
- 1 cup long grain rice, uncooked
- 1 ½ cups chicken broth
- Olive oil
Instructions
- Marinate the chicken thighs with lemon zest, lemon juice, oregano, garlic, salt, and olive oil in a ziplock bag for at least 20 minutes or overnight for more flavor.
- In a large pot or Dutch oven, heat olive oil over medium heat and sauté the diced onion until translucent.
