  • 12 small corn or flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup shredded cabbage or slaw mix
  • Optional toppings: avocado slices, sriracha mayo, lime wedges

Instructions

  1. Marinate the chicken: Combine soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes in a bowl. Add cubed chicken, coat well, and refrigerate for at least 30 minutes.
  2. Prepare the pineapple salsa: Mix diced pineapple, red bell pepper, red onion, cilantro, jalapeño (if using), lime juice, and salt in another bowl. Refrigerate until ready.
