  • ½ cup cocoa powder
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup buttermilk
  • 1 ½ cups heavy whipping cream
  • 2 cups shredded coconut
  • Pink food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.

  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs and vanilla; mix well.
  4. Alternately mix dry ingredients with buttermilk and hot water until smooth.
  5. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool completely before frosting with whipped cream mixed with powdered sugar, vanilla extract, and coconut.
  7. Color shredded coconut pink and sprinkle on top before refrigerating for at least an hour.
