- 4 salmon fillets (6 ounces each, skin removed)
- 1 cup full-fat coconut milk
- 1/2 cup fish stock or water
- 2 cloves garlic (minced)
- 1 small onion (finely chopped)
- 1 tablespoon fresh ginger (grated)
- Zest and juice of 2 limes
- 1 tablespoon soy sauce (or tamari for gluten-free)
- Salt and pepper to taste
Instructions
- Gather all ingredients; chop onion, mince garlic and ginger, zest one lime, and squeeze juice from two limes.
