  • 120g powdered sugar
  • 2 large egg whites (65g)
  • 50g granulated sugar
  • 1/4 cup freeze-dried raspberries
  • 3/4 cup fresh/frozen raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 6 tbsp unsalted butter

Instructions

  1. Preheat oven to 300°F (150°C). Line baking sheets with parchment paper or silicone mats.
  2. Blend almond meal and powdered sugar in a food processor; sift into a bowl.
  3. Whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
  4. Fold dry ingredients into egg whites until batter flows like lava.
  5. Pipe rounds onto prepared sheets, dust with raspberry powder, and let rest for 30 minutes.
  6. Bake for about 15 minutes; cool completely before filling.
  7. Make raspberry buttercream by mixing room-temperature butter with cooled raspberry syrup until fluffy.
  8. Assemble macarons by piping buttercream onto half and sandwiching with remaining shells.
