Ingredients
- 6–8 ripe large peaches
- 1 ½ cups freshly squeezed lemon juice
- 1 cup granulated sugar (divided)
- 4–6 cups cold water
- Fresh peach slices, lemon wedges, and mint sprigs for garnish
- Ice cubes
Instructions
- Prepare the peaches by washing, pitting, and dicing them. In a medium saucepan, combine diced peaches with ½ cup sugar, ½ cup water, and 1 tablespoon lemon juice. Simmer over medium-low heat for 10-15 minutes until soft.
- Mash the peaches thoroughly and strain through a fine-mesh sieve into a large bowl to extract smooth puree. Allow cooling.
- In a small saucepan, combine 1 cup sugar and 1 cup water over medium heat until dissolved; cool completely.
- Juice 8-10 lemons to yield about 1 ½ cups juice; strain out seeds.
- In a large pitcher, mix cooled simple syrup with strained lemon juice. Stir in peach puree and add cold water gradually until desired taste is achieved.
- Chill the lemonade for at least 30 minutes before serving over ice with garnishes.
