  • 1 lb uncooked Italian sausage
  • 1 small white onion (thinly sliced)
  • 23 garlic cloves (minced)
  • 1 can (8 oz) tomato puree
  • 1 can (14 oz) crushed tomatoes
  • 13 cups chicken broth (to taste)
  • 1 teaspoon dried basil
  • 1 cup cream cheese (chopped and softened)
  • ¼ cup parmesan cheese (grated)
  • Kosher salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onions and sauté until softened, about 4–5 minutes.
  2. Add the sausage, breaking it up with a spatula until cooked through. Stir in garlic and cook for another minute until fragrant.
  3. Mix in the tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce heat and simmer for 10–15 minutes.
  4. Stir in cream cheese and half the parmesan until melted into a creamy consistency. Adjust thickness with more broth if desired.
  5. Season with salt and pepper to taste. Serve hot topped with remaining parmesan and fresh parsley.
