Ingredients
- 2 cups butternut squash, peeled and diced
- 1 pound steak (sirloin or ribeye), cut into cubes
- 1 cup quinoa, rinsed

- Fresh herbs (parsley, thyme, rosemary)
- Olive oil, salt, and pepper
Instructions
- Preheat the oven to 400°F (200°C) for roasting the butternut squash.
- Toss diced butternut squash with olive oil, salt, pepper, and herbs; spread on a baking sheet and roast for 25–30 minutes until golden.
- In a saucepan, bring 2 cups of water to a boil; add rinsed quinoa. Reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
- Heat a cast iron skillet over medium-high heat; season steak cubes with salt and pepper. Sear for about 2–3 minutes per side until browned; let rest.
- Blend sautéed garlic with heavy cream or Greek yogurt, herbs, and salt until smooth.
