  • 1 lb Sirloin Steak
  • 1/2 cup Irish Whiskey
  • 2 tbsp Butter
  • 1 cup Cream
  • 2 cups Potatoes (Russets preferred)
  • 1 cup Kale
  • 2 tbsp Shallots
  • Salt to taste
  • Pepper to taste

Instructions

  1. Marinate the sirloin steak in melted butter and Irish whiskey for at least 3 hours.
  2. Preheat a cast iron pan over medium-high heat. Sear the marinated steak for 3-4 minutes on each side until browned.
  3. Transfer the steaks to a preheated oven at 350°F and bake for about 10 minutes until desired doneness.
  4. Boil potatoes until tender, then mash with cooked kale, seasoning with salt and pepper.
  5. In the same pan used for the steak, sauté shallots until translucent, deglaze with whiskey, stir in cream, and simmer until thickened.
  6. Serve the steak over colcannon, drizzled generously with the whiskey cream sauce.
