  • 4 large russet potatoes
  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ¾ cup frozen peas
  • ½ cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub potatoes, prick them with a fork, and rub with olive oil and salt. Bake for 45-50 minutes until tender.
  3. While baking, heat olive oil in a skillet over medium heat. Brown the meat and drain excess grease.
  4. Add onion, carrots, and garlic; cook until softened.
  5. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Add broth and simmer until thickened.
  6. Mix in frozen peas.
  7. Slice the tops off the baked potatoes and scoop out most of the insides into a bowl. Mash with milk, butter, garlic powder, salt, and pepper.
  8. Fill potato skins with meat mixture and top with mashed potatoes (add cheese if desired). Bake for another 10-15 minutes until golden.
