- 4 large russet potatoes
- 1 pound ground beef or ground lamb
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- ¾ cup frozen peas
- ½ cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub potatoes, prick them with a fork, and rub with olive oil and salt. Bake for 45-50 minutes until tender.
- While baking, heat olive oil in a skillet over medium heat. Brown the meat and drain excess grease.
- Add onion, carrots, and garlic; cook until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Add broth and simmer until thickened.
- Mix in frozen peas.
- Slice the tops off the baked potatoes and scoop out most of the insides into a bowl. Mash with milk, butter, garlic powder, salt, and pepper.
- Fill potato skins with meat mixture and top with mashed potatoes (add cheese if desired). Bake for another 10-15 minutes until golden.
