Ingredients

  • 4 salmon fillets
  • 1.5 tbsp olive oil (plus more for drizzling)
  • 4 cups spinach (fresh or thawed frozen)
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1 pinch cayenne pepper
  • 6 oz feta cheese (crumbled)
  • 1/3 cup Parmesan cheese (grated)
  • 1/4 cup roasted red peppers (chopped)
  • 1/2 tsp garlic powder
  • salt
  • black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the salmon fillets skin-side down on a lined baking sheet and butterfly each fillet to create pockets.
  3. In a mixing bowl, combine olive oil, spinach, Italian seasoning, paprika, cayenne pepper, feta cheese, Parmesan cheese, roasted red peppers, garlic powder, salt, and black pepper. Mix well.
  4. Spoon the filling into the butterflied salmon fillets and drizzle with olive oil. Season as desired.
  5. Bake for about 10 minutes or until the salmon flakes easily with a fork.
