- 1.5 tbsp olive oil (plus more for drizzling)
- 4 cups spinach (fresh or thawed frozen)
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1 pinch cayenne pepper
- 6 oz feta cheese (crumbled)
- 1/3 cup Parmesan cheese (grated)
- 1/4 cup roasted red peppers (chopped)
- 1/2 tsp garlic powder

Instructions
- Preheat your oven to 375°F (190°C).
- Place the salmon fillets skin-side down on a lined baking sheet and butterfly each fillet to create pockets.
- In a mixing bowl, combine olive oil, spinach, Italian seasoning, paprika, cayenne pepper, feta cheese, Parmesan cheese, roasted red peppers, garlic powder, salt, and black pepper. Mix well.
- Spoon the filling into the butterflied salmon fillets and drizzle with olive oil. Season as desired.
