Ingredients
- 1 cup orzo
- 15 oz chickpeas, rinsed and drained

- 3 tbsp lemon juice
- 1.5 tbsp olive oil
- Fresh herbs: basil and parsley
- 2 tsp salt
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup almonds, chopped
- 1/4 cup red onion, finely chopped
Instructions
- In a large pot, bring water to boil and add salt. Cook orzo for 8-10 minutes until al dente. Drain and rinse under cold water.
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, and salt.
- Combine cooked orzo, arugula, chickpeas, feta cheese, olives, sun-dried tomatoes, fresh herbs, chopped almonds, and red onion in the bowl with the dressing. Toss gently until everything is well-coated.
