Ingredients
- 3/4 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 8 ounces reduced-fat cream cheese, softened
- 3/4 cup plain 0% Greek yogurt
- 2 large egg whites
- 1/3 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon vanilla extract
- 1–2 teaspoons coconut extract
- Topping: 1/3 cup sliced almonds
- 1/3 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 baking dish with foil.
- In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of the baking dish. Bake for 8-9 minutes until set.
- In another bowl, beat cream cheese until smooth. Add Greek yogurt, egg whites, sugar, and flour; mix until combined. Stir in extracts before pouring over the crust.
- Bake for 20 minutes, cover with foil, and bake for another 5 minutes.
- Toast almonds and coconut in a pan over medium-low heat until golden brown.
- Cool bars slightly, top with toasted mixture, then chill for at least 30 minutes.
