  • 3/4 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 8 ounces reduced-fat cream cheese, softened
  • 3/4 cup plain 0% Greek yogurt
  • 2 large egg whites
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons coconut extract
  • Topping: 1/3 cup sliced almonds
  • 1/3 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 baking dish with foil.
  2. In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of the baking dish. Bake for 8-9 minutes until set.
  3. In another bowl, beat cream cheese until smooth. Add Greek yogurt, egg whites, sugar, and flour; mix until combined. Stir in extracts before pouring over the crust.
  4. Bake for 20 minutes, cover with foil, and bake for another 5 minutes.
  5. Toast almonds and coconut in a pan over medium-low heat until golden brown.
  6. Cool bars slightly, top with toasted mixture, then chill for at least 30 minutes.
