  • 6 dried guajillo chiles
  • 2 dried ancho chiles
  • 3 lb beef stew meat
  • 1 small yellow onion
  • 2 dried arbol chiles (optional for heat)
  • 1 tsp ground cumin
  • 2 tsp dried oregano (Mexican oregano preferred)
  • 1 tsp sea salt
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 2 tbsp avocado oil (or any neutral oil like canola)
  • 1/4 cup gluten-free all-purpose flour (for coating)
  • 1/2 tsp black pepper (freshly ground preferred)
  • 2 bay leaves

Instructions

  1. Remove stems and seeds from dried chiles. Toast them in a dry pan over medium heat for 2-3 minutes until fragrant.
  2. In a blender, combine toasted chiles with beef broth, cumin, oregano, garlic powder, and sea salt. Blend until smooth.
  3. Sear seasoned beef in avocado oil in a skillet until browned on all sides.
  4. Place seared beef in the slow cooker along with chopped onion and blended sauce; mix well.
  5. Cover and cook on low for about 4 hours or until the beef is tender.
  6. Remove bay leaves before serving hot.
