- 3 pounds beef chuck roast (1-inch cubes)

- 2 tablespoons tomato paste
- 2 (14.5-ounce) cans fire-roasted diced tomatoes
- 1 (8-ounce) can tomato sauce
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 2 tablespoons masa harina or cornmeal
Instructions
- Sear beef in olive oil in a skillet until browned; transfer to slow cooker.
- In the slow cooker, combine onion, tomato paste, diced tomatoes, tomato sauce, beef broth, spices, and Worcestershire sauce; mix well.
- Cover and cook on low for 7-8 hours or high for 3-4 hours.
