  • For the bath: 2 cups warm water and 2 tbsp baking soda
  • For serving: 6 tbsp melted unsalted butter and coarse pretzel salt

Instructions

  1. Combine warm milk and water in a bowl, sprinkle yeast over top, and let sit for 5 minutes until frothy.
  2. In a mixing bowl, combine bread flour, brown sugar, salt, and baking powder. Add yeast mixture and melted butter; mix until combined.
  3. Knead dough (5 minutes in stand mixer or by hand) until smooth. Let rise covered in a warm place for about 30 minutes until doubled.
  4. Preheat oven to 425°F (220°C). Punch down risen dough and divide into six pieces. Roll each into a long rope (24 inches) and twist into pretzel shape.
  5. In a pot, simmer warm water; stir in baking soda carefully. Dip each pretzel into the bath for 30 seconds, then place on parchment-lined baking sheet.
