- 1 large spaghetti squash (3–4 pounds)
- 4 tablespoons unsalted butter
- 1 medium yellow onion
- 2 cloves garlic
- 4 tablespoons all-purpose flour
- 3 cups whole milk
- Salt
- Black pepper
- Nutmeg
- 1 cup grated Gruyere cheese
- 1 cup grated sharp cheddar cheese
- ½ cup grated Parmesan cheese
- ¼ cup panko breadcrumbs
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise, scoop out the seeds, season with melted butter, salt, and pepper, then roast cut-side down on a parchment-lined baking sheet for 45-60 minutes.
