  • 34 jalapeños, seeded and finely chopped
  • 3 cloves garlic, minced
  • 1 lb cooked shredded chicken (rotisserie recommended)
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • smoked paprika
  • salt and pepper

Instructions

  1. In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  2. Sauté onion and jalapeños in the remaining grease for 4–5 minutes; add garlic and cook for an additional 30 seconds.
  3. Stir in shredded chicken and chicken broth; bring to a gentle boil, then simmer for 10 minutes.
  4. Reduce heat and mix in cream cheese until melted; then add cheddar cheese and heavy cream until smooth.
  5. Season with smoked paprika, salt, and pepper; simmer on low for another 5–10 minutes.
  6. Serve topped with reserved bacon, extra cheese, jalapeños, or green onions.
