  • 1.5 cups sushi rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon sesame oil
  • 1 pound sushi-grade ahi tuna (finely chopped)
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 12 teaspoons lime juice (to taste)
  • Avocado (thinly sliced)
  • Toasted sesame seeds
  • Chives or scallions (minced)
  • Jalapeño or serrano pepper (sliced)

Instructions

  1. Cook the rinsed sushi rice in a rice cooker with water until fluffy. Let it cool before mixing in salt, vinegar, sugar, and sesame oil.
  2. In a bowl, combine chopped tuna with kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice until well mixed.
  3. Spread cooled rice onto a baking sheet and press down evenly. Refrigerate for 30 minutes to set.
  4. Cut the chilled rice into rectangles and fry them in hot oil until golden brown on both sides.
  5. Assemble by placing crispy rice cakes on a platter, topping with avocado slices and spicy tuna mixture.
