  • 4 large Portobello mushrooms
  • 2 cups fresh spinach, chopped
  • ½ cup ricotta cheese
  • ¼ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup breadcrumbs (optional)
  • Fresh parsley, chopped
  • Extra Parmesan cheese for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C). Clean mushrooms and remove stems.
  2. Brush mushroom caps with olive oil and sprinkle with salt and pepper. Bake for 5-7 minutes.
  3. Sauté garlic in olive oil for about 30 seconds. Add spinach and cook until wilted.
  4. Combine cooked spinach with ricotta, cream cheese, mozzarella, Parmesan, and seasonings.
  5. Stuff the mushroom caps with the mixture and top with remaining mozzarella.
  6. Bake for another 10-12 minutes until cheese is melted and bubbly.
