Ingredients
- 2 tablespoons extra virgin olive oil
- 1.5 pounds white mushrooms
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 6 ounces cream cheese
- ½ cup grated mozzarella
- ¾ cup bread crumbs
- ½ cup grated Parmesan
- 3 tablespoons fresh parsley, chopped
- 1 ½ tablespoons butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Quarter the mushrooms and sauté with salt and pepper until moisture evaporates (7-9 minutes).
- Add minced garlic and cook until fragrant (about 1 minute).
- Stir in cream cheese until mushrooms are coated. Remove from heat and blend in mozzarella, half the breadcrumbs, and half the Parmesan.
- Transfer mixture to a greased baking dish.
- In a separate bowl, combine remaining breadcrumbs with Parmesan, parsley, and melted butter; sprinkle on top of mushroom mixture.
- Bake for 25-30 minutes until topping is golden brown.
