  • 2.5 lb pork loin roast
  • 1.5 lbs sauerkraut
  • 2.5 tbsp chicken soup base
  • 1/4 cup brown sugar
  • 2 garlic cloves (finely minced)
  • 1.5 cups apple slices
  • 1 cup water
  • 1/2 yellow onion (diced into 1/2-inch pieces)
  • 1 bag wide egg noodles
  • 2 tbsp unsalted butter
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Season the pork loin roast with salt and black pepper. Sear in a hot Dutch oven until browned on all sides (about 4-5 minutes per side).
  2. Remove pork and add sauerkraut, chicken soup base, brown sugar, minced garlic, apple slices, water, diced onion, and black pepper to the pot. Stir well.
  3. Return the seared pork to the pot on top of the mixture, cover with a lid, reduce heat to low, and cook for about 90 minutes or until tender.
  4. Cook egg noodles according to package instructions; drain and toss with unsalted butter.
  5. Slice pork thickly, serve over noodles with sauerkraut mixture on the side, garnished with fresh parsley.
