  • 13 ounces potstickers (vegetarian or meat)
  • 2 cups fresh spinach
  • Juice of 1 lime

Instructions

  2. Stir in red curry paste and cook for 1 minute until fragrant. Pour in coconut milk and vegetable stock; whisk until smooth.
  3. Bring to a boil; add potstickers and reduce to a simmer. Cook for 6–8 minutes until the broth thickens slightly.
  4. Stir in spinach and lime juice; cook for an additional 1–2 minutes until spinach wilts.
