  • 1 cup water

  • 4 eggs
  • gold luster dust (for decoration)

Instructions

  1. Prepare the cream filling by whisking milk, egg yolks, sugar, cornstarch, and salt in a saucepan. Cook over medium heat until thickened, then stir in passionfruit purée and butter. Refrigerate until chilled.
  2. For the choux pastry, preheat the oven to 400°F (200°C). Boil water, butter, and salt in a saucepan; add flour all at once. Stir vigorously until a ball forms, then cool slightly before incorporating eggs one at a time.
  3. Pipe small mounds of choux pastry onto a lined baking sheet and bake for about 15 minutes until golden brown.
  4. Once cooled, fill each puff with chilled passionfruit cream using a piping bag. Decorate as desired.
