  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water. Drain and reserve about 1 cup of pasta water.
  2. In a skillet over medium heat, warm the olive oil and sauté the diced onion until translucent (about 5 minutes).
  3. Add minced garlic and sauté for another minute until fragrant.
  4. Stir in the zucchini slices and cook until tender (4-5 minutes).
  5. Add cherry tomatoes, oregano, basil, salt, and pepper; cook for an additional 5-7 minutes until softened.
  6. Toss in the cooked pasta and mix well. If needed, add reserved pasta water to reach desired consistency.
  7. Let sit briefly before serving garnished with fresh basil and Parmesan.
