  • 1 cup coconut milk
  • ½ cup sugar
  • 1 tbsp vanilla extract
  • ½1 cup milk (or evaporated milk)
  • ½ cup quick-cook tapioca pearls
  • Ice cubes

Instructions

  1. Prepare the ube base by blending thawed ube, coconut milk, sugar, vanilla extract, and ube extract until smooth.
  2. Cook tapioca pearls according to package instructions until translucent; drain and rinse.
  3. In a large glass, combine the ube base with chilled milk. Add cooked tapioca pearls at the bottom.
