- 226 g frozen ube (thawed)
- 1 cup coconut milk
- ½ cup sugar
- 1 tbsp vanilla extract
- ½ – 1 cup milk (or evaporated milk)
- ½ cup quick-cook tapioca pearls
- Ice cubes
Instructions
- Prepare the ube base by blending thawed ube, coconut milk, sugar, vanilla extract, and ube extract until smooth.
- Cook tapioca pearls according to package instructions until translucent; drain and rinse.
- In a large glass, combine the ube base with chilled milk. Add cooked tapioca pearls at the bottom.
- Fill glasses with ice before pouring in the ube milk tea mixture.
