  • 2 tablespoons caster sugar (plus extra for sprinkling)
  • 220g cold dairy-free block butter, cubed
  • Ice water (as needed)
  • 1 jar vegan-friendly strawberry jam
  • Optional: Dairy-free milk for brushing, icing sugar for dusting

Instructions

  1. In a mixing bowl, blend the flour, caster sugar, and dairy-free butter until crumbly. Gradually add ice water until a dough forms.
  2. Shape the dough into a disc, wrap in cling film, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 180°C (350°F). Roll out the chilled dough to 0.5cm thickness and cut into heart shapes.
  4. Place half of the pastry hearts on a lined baking sheet. Spoon strawberry jam onto each heart, moisten edges with dairy-free milk, and top with another heart.
  5. Seal edges gently, brush with dairy-free milk, sprinkle with sugar, and bake for 20-25 minutes until golden brown.
