- 12 oz frozen raspberries
- 1 1/3 cups sugar (divided)
- 2 teaspoons cornstarch
- 1 ½ cups chocolate graham cracker crumbs
- 4 tablespoons unsalted butter
- 24 oz cream cheese
- 3 large eggs
- 2/3 cup sour cream
- 8 oz white baking chocolate
Instructions
- Preheat oven to 350°F. Prepare an 8×3-inch springform pan with cooking spray.
- Combine thawed raspberries and sugar in a bowl; add cornstarch mixture. Set aside.
- Mix graham cracker crumbs with remaining sugar and melted butter; press into the bottom of the pan.
- Beat cream cheese and sugar until smooth; add remaining ingredients, mixing until combined.
- Layer half of cheesecake filling over crust, dollop raspberry swirl, then add remaining filling and more swirl on top. Create swirls with a knife.
- Bake for about 135 minutes until set but jiggly in the center. Cool before refrigerating for at least three hours.
