  • 1 1/3 cups sugar (divided)
  • 2 teaspoons cornstarch
  • 1 ½ cups chocolate graham cracker crumbs
  • 4 tablespoons unsalted butter
  • 24 oz cream cheese
  • 3 large eggs
  • 2/3 cup sour cream
  • 8 oz white baking chocolate

Instructions

  1. Preheat oven to 350°F. Prepare an 8×3-inch springform pan with cooking spray.
  2. Combine thawed raspberries and sugar in a bowl; add cornstarch mixture. Set aside.
  3. Mix graham cracker crumbs with remaining sugar and melted butter; press into the bottom of the pan.
  4. Beat cream cheese and sugar until smooth; add remaining ingredients, mixing until combined.
  5. Layer half of cheesecake filling over crust, dollop raspberry swirl, then add remaining filling and more swirl on top. Create swirls with a knife.
  6. Bake for about 135 minutes until set but jiggly in the center. Cool before refrigerating for at least three hours.
