Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup dark brown sugar
- 5 Tbsp butter (melted)
- 1 tsp vanilla
- 4.4 oz white chocolate bar (goes on top of pressed crust)
- 24 oz cream cheese packs (softened)
- 3/4 cup heavy whipping cream
- 2 tbsp plain yogurt
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 Tbsp corn starch
- 1/2 cup white granulated sugar
- 6 oz raspberries
- 3/4 cup white granulated sugar
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 Tbsp cornstarch (mixed with a splash of cold water)
- 4 oz white chocolate (bar or melts) (melted)
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, dark brown sugar, melted butter, and vanilla; press into a springform pan.
- Melt white chocolate and pour over crust; set aside.
- Cook raspberries with sugar and lemon juice until thickened; let cool.
- Beat cream cheese until smooth; add remaining ingredients gradually.
- Layer half of the cheesecake filling in the pan, drizzle with raspberry mixture, and swirl gently before adding the rest of the filling.
- Bake for about 85 minutes in a water bath until slightly jiggly in the center.
- Cool in the oven with the door ajar for an hour before refrigerating for at least five hours.
