  • 1 avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • A few dashes of hot sauce (optional for an extra kick)

Instructions

  1. Rinse mixed greens and pat dry; place in a large bowl.
  2. Halve cherry tomatoes and add them to the bowl.
  3. Dice cucumber and bell pepper; add along with shredded carrots.
  4. Slice red onion thinly; soak in water if milder flavor is desired before adding.
  5. Add corn kernels (drained if using canned).
